pixel counts are concentrate in a smaller number
of bins, this is the joint histogram on the right side
of Figure 8.16.

By concentrating the pixel counts in a smaller
number of bins, each one with more pixel counts,
we have reduced the Joint Entropy, and therefore
we have increased Mutual Information.
